We sat down with Claire Strutton, the driving force behind La Sala by the Sea, to find out how her vision turned into a local institution.

Claire, what made you decide to bring Thai beach club vibes to Marbella?

We just love Thailand. The culture, the food, the relaxed beach energy and we thought, why not bring a piece of that to Marbella? We didn’t want to copy what other places were doing. We wanted something original, and Thai influence gave us that edge. That’s how La Sala by the Sea came to life, it’s a blend of two worlds we adore.

Thai cuisine isn’t what people usually expect on the Costa del Sol. How did you make it work?

We didn’t try to water it down or adapt it too much. The flavours are authentically Thai, and our guests actually appreciate that. People are more adventurous with food these days – they want something real, not a version of it. So we stuck with the proper spice, herbs, and balance, and it paid off.

How do you keep the Thai ingredients authentic?

It’s so much easier now than it was when we first opened. Back then, we had to import a lot. Now, we’ve got some brilliant local organic farmers growing Thai ingredients like lemongrass, Thai basil, galangal and chillies. It’s fresher, more sustainable, and keeps the flavours spot on!

How do you handle the pressure when the venue is packed in peak summer?

We’ve got a giant walk-in fridge for all the wine and champagne – but on those 40°C days, it becomes a chill-out zone for the team too! We let everyone take fridge breaks to cool off and reset. It keeps the energy high and the smiles real. No one wants a meltdown in or out of the kitchen!

You’ve been running La Sala by the Sea for over 15 years. What’s your leadership style like?

I try to lead by example, but also give people the space to do what they do best. Everyone knows the standards, but we keep it fun too. Whether it’s chefs, waiters or spa staff, the team is what makes this place tick. When they’re happy and energised by what they’re doing, that energy flows through to our customers.

Do guest opinions shape the menu?

Absolutely. All feedback is gratefully received and we take it seriously. Whether someone loves a dish, wants it spicier, or has a great idea, we’re listening. That’s why the menu has evolved so much – it’s a collaboration between us and our guests.

Final one, how would you describe La Sala by the Sea in just three words?
